Arrange the prepared garlic bulbs snugly in a small, oven-safe baking dish. Generously drizzle the extra virgin olive oil and the bright lemon juice over the garlic, ensuring even coverage. Next, sprinkle the fragrant, picked rosemary leaves all over the bulbs.
Season the garlic liberally with a pinch of sea salt and a generous grind of freshly cracked black pepper, enhancing its natural savory notes.
Tightly cover the baking dish with aluminum foil. Transfer it to the preheated oven and allow it to roast for approximately 55 minutes, or until the garlic cloves have transformed into an incredibly soft, golden, and caramelized consistency.
Once roasted to perfection, carefully remove the dish from the oven. Keep it covered with the aluminum foil and let it rest for an additional 10 minutes. This resting period allows the garlic to continue steaming, resulting in an even more tender texture.
After resting, gently squeeze the soft, sweet garlic paste from each individual clove. This versatile roasted garlic can be used as a spread, mixed into dressings, or incorporated into various dishes as desired.
