  • 6 cloves garlic, chopped
  • 1/4 cup fresh ginger, peeled and chopped
  • 1/4-1/2 cup water, as needed to blend
  • 1/2 cup tahini
  • 1/2 cup smooth peanut butter
  • 1/2 cup soy sauce
  • 1/4 cup dry sherry
  • 1/4 cup rice wine vinegar
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1/2 teaspoon hot chili oil
  • 2 tablespoons dark sesame oil
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 lb lo mein noodles
  • 1 lb spaghetti
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 4 scallions, white and green parts, sliced diagonally

Method

Follow the steps in order for the best result.

  1. Combine the garlic, ginger, water, tahini, peanut butter, soy sauce, dry sherry, rice wine vinegar, brown sugar, chili oil, sesame oil, black pepper, and cayenne pepper in a blender. Process until you achieve a completely smooth sauce.
  2. Prepare the noodles according to the package instructions until they are cooked through.
  3. Drain the cooked pasta thoroughly and transfer it to a large serving bowl.
  4. While the pasta is still warm, pour approximately 3/4 of the prepared Szechuan sauce over the noodles and toss to coat evenly.
  5. Incorporate the julienned red and yellow bell peppers and the sliced scallions into the sauced noodles. Toss everything together gently until the vegetables are well distributed.
  6. These Szechuan Noodles can be served immediately while warm, or they can be enjoyed at room temperature, making them perfect for meal prepping.
  7. If the noodles seem a bit dry after tossing, add more of the remaining sauce, adjusting to your preferred level of sauciness.
