Layer the chopped green, yellow, and red bell peppers, along with the yellow and red onions, and minced garlic, on top of the meat and bean mixture in the pot. Cover the pot and allow the vegetables to steam for about 15-20 minutes. Afterward, stir everything together thoroughly.
Incorporate the finely chopped jalapeno peppers, chipotle chiles in adobo, serrano peppers, habanero peppers, banana pepper, cherry peppers, Anaheim chili, and both the red and green cayenne peppers into the chili.
Season the chili with chili powder, ground cumin, red pepper flakes, and taco seasoning mix. Add salt, black pepper, and ground red pepper to your preferred taste. Cover the pot and let the chili simmer over medium heat, stirring occasionally, for 1-2 hours, allowing the flavors to meld together.
