  • 1 large sweet potato
  • 3 potatoes
  • 2 large celery ribs
  • 2 large carrots
  • 1 head cauliflower
  • 1 cup butternut squash
  • 1 chicken thigh, on bone
  • 1 large turnip
  • 1 parsnip
  • 1 1/2 cups rutabagas
  • 1 tablespoon chicken bouillon powder

Method

Follow the steps in order for the best result.

  1. Prepare the vegetables by chopping them into your preferred size, whether you like larger chunks or smaller pieces.
  2. Cut the chicken thigh into smaller, manageable pieces. For a richer, more intensely flavored broth, consider leaving the chicken meat on the bone during cooking.
  3. Combine all the prepared vegetables and chicken in a large stockpot.
  4. Add enough water to completely submerge all the ingredients.
  5. Stir in the chicken bouillon powder to season the soup.
  6. Bring the mixture to a boil over high heat, then reduce the heat to low and allow the soup to simmer gently for approximately 1 1/2 hours, or until the vegetables are tender and the chicken is cooked through.
  7. This soup is excellent for making ahead. It can be easily refrigerated and reheated, allowing the flavors to meld together even further.
