- 1 loaf focaccia bread
- 5-6 ripe tomatoes, chopped
- 2 tablespoons chopped fresh basil
- 1/4 red onion, sliced paper thin
- 4 ounces fresh mozzarella cheese, cut into cubes
- 8 ounces balsamic vinaigrette
Method
Follow the steps in order for the best result.
Slice the focaccia loaf into four equal wedges and arrange them on a serving plate.
In a mixing bowl, gently combine the chopped tomatoes, fresh basil, and thinly sliced red onion.
Divide the tomato mixture evenly, placing one-quarter of it on top of each focaccia wedge.
Sprinkle one-quarter of the mozzarella cheese cubes over each portion.
Drizzle approximately 2 ounces of balsamic vinaigrette over each salad wedge.
