  • 2 1/2 cups cooked chicken, diced and chilled
  • 1 cup chopped celery
  • 1 cup seedless grapes, cut in half
  • 1/4 cup dried cranberries
  • 1/4 cup pecan halves, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1 cup mayonnaise
  • 1/3 cup heavy whipping cream

Method

Follow the steps in order for the best result.

  1. In a medium-sized bowl, use a whisk or electric mixer to whip the heavy cream until soft peaks form.
  2. In a separate, larger bowl, combine the diced chicken, chopped celery, halved grapes, dried cranberries, chopped pecans, fresh parsley, and salt.
  3. Add the mayonnaise and whipped cream to the chicken mixture. Gently fold everything together until well combined.
  4. Cover the bowl and refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld. Serve chilled and enjoy!
