  • 2 tablespoons oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 1/2 lbs lean pork, sliced in small pieces
  • 1 tablespoon soy sauce
  • 2 tablespoons patis (fish sauce)
  • 1/2 cup water
  • 1 bay leaf
  • 3 ounces tomato paste
  • 6 ounce package frozen peas
  • 3-4 ounce can pimientos, sliced
  • salt

Method

Follow the steps in order for the best result.

  1. In a large skillet, heat the oil over medium heat.
  2. Add the minced garlic and sliced onions to the skillet and sauté until fragrant and softened. Incorporate the pork pieces and brown them evenly on all sides.
  3. Introduce the soy sauce, fish sauce (patis), water, and bay leaf. Stir well to combine all the ingredients.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer until the pork becomes tender, which should take approximately 5-7 minutes.
  5. Stir in the tomato paste, frozen peas, and sliced pimientos. Ensure everything is well combined.
  6. Continue to simmer for an additional 5 minutes, allowing the flavors to meld together harmoniously.
  7. Season with salt to your preference. Serve hot and enjoy this delightful Filipino dish.
