In a medium saucepan set over medium heat, combine the peanuts, pistachios, pecan halves, sugar, butter, corn syrup, and honey.
Using a sturdy wooden spoon, stir the mixture continuously until it transforms into a beautiful walnut color and noticeably thickens. This should take approximately 10-12 minutes.
Swiftly pour the hot mixture onto a baking sheet that has been lined with foil. Use the back of a spoon to spread the brittle evenly to a thickness of about 1/3 inch.
Allow the brittle to cool for 3-4 minutes. While it's still slightly pliable, use a sharp knife to score it into roughly 24 squares, each measuring about 2 inches.
Once the brittle has completely cooled and hardened, snap it apart along the scored lines to create individual pieces.
