  • 3 large eggs, beaten
  • 3 tablespoons Tabasco sauce
  • 1 medium onion, sliced 1/4-inch thick
  • 2 garlic cloves, smashed and peeled
  • 1 whole chicken, cut into 8 pieces

Method

  1. In a large bowl or baking dish, combine the beaten eggs, Tabasco sauce, sliced onion, and smashed garlic. Mix well to incorporate the ingredients.
  2. Add the chicken pieces to the mixture, ensuring each piece is thoroughly coated. Cover the bowl or dish and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to meld and the chicken to tenderize.
  3. Preheat your oven to 450°F (232°C). Place a rimmed baking sheet on the center rack of the oven. This will help to ensure even cooking and prevent any drips.
  4. In a medium bowl, whisk together the flour, cornmeal, coarse salt, sweet paprika, and cayenne pepper. This mixture will create a flavorful and crispy coating for the chicken.
  5. Remove the chicken from the marinade, allowing any excess to drip off. Roll each piece in the flour mixture, making sure to coat it completely. Shake off any excess flour mixture to avoid a thick, pasty coating.
  6. Discard the remaining marinade.
  7. Arrange the coated chicken pieces on the preheated baking sheet in a single layer, ensuring they are not overcrowded. Bake for 20 minutes.
  8. Remove the baking sheet from the oven and lightly brush the top of each chicken piece with olive oil. Return the baking sheet to the oven and continue baking, brushing the tops with olive oil every 10 minutes, until the chicken is dark golden brown and cooked through. This should take approximately 30-40 minutes more.
  9. To ensure the chicken is cooked through, use a meat thermometer to check the internal temperature. It should reach 165°F (74°C).
  10. Once the chicken is done, transfer it to a wire rack and allow it to cool slightly before serving. This will help to maintain its crispiness.
