  • 12 ounce Johnsonville Breakfast Sausage Patties
  • 2 small roma tomatoes, diced
  • 1/2 cup diced fresh pineapple
  • 4 strawberries, hulled and diced
  • 4 large fresh basil leaves, cut into thin strips
  • 1/4 cup fresh mint leaves, chopped
  • 3 tablespoons maple syrup
  • 1 French baguette, cut into 1/2-inch slices
  • 1/3 cup olive oil
  • 8 slices fresh mozzarella cheese, cut in half

Method

Follow the steps in order for the best result.

  1. Begin by prepping the sausage. On a cutting board, slice each raw sausage patty in half. Reform each half into a mini patty, creating 16 small patties in total.
  2. Heat a nonstick skillet over medium heat. Cook the mini sausage patties for approximately 6-8 minutes, ensuring they are fully cooked and nicely browned. Remember to turn them frequently for even cooking. Once cooked, transfer the sausage patties to a plate and keep them warm.
  3. In a mixing bowl, combine the diced tomatoes, pineapple, strawberries, basil, mint, and maple syrup. Gently mix these ingredients together and set aside.
  4. Position the oven rack in the upper third of the oven and preheat the broiler.
  5. Arrange the baguette slices on a baking sheet. Lightly brush one side of each slice with olive oil and place them oiled-side down on the baking sheet.
  6. Broil the bread slices for 1-2 minutes, or until they are lightly toasted. Keep a close watch to prevent burning.
  7. Remove the baking sheet from the oven and, using tongs, flip each bread slice over.
  8. Place a piece of mozzarella cheese on top of each bread slice.
  9. Return the baking sheet to the oven and broil for an additional minute, or until the mozzarella is melted and slightly bubbly.
  10. Carefully transfer the bruschetta bites to a serving plate.
  11. Top each bruschetta bite with a cooked sausage patty.
  12. Spoon approximately 1 tablespoon of the fruit mixture onto each sausage patty. Serve immediately and enjoy the delightful combination of sweet and savory flavors.
