Ingredients

Localized ingredient list prepared for quick scanning.

  • 1 whole beef tenderloin (5-6 pounds), trimmed
  • 1 cup Dijon mustard
  • salt
  • freshly ground black pepper
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 4-5 teaspoons prepared horseradish
  • 4-5 ounces gorgonzola cheese, crumbled
  • 1/2 lemon, juiced
  • 1 teaspoon Worcestershire sauce
  • salt
  • pepper

Method

Follow the steps in order for the best result.

  1. Prepare the beef tenderloin by trimming away any excess silver skin or fat. If desired, tie the tenderloin at intervals with kitchen twine to ensure even cooking and a uniform shape.
  2. Thoroughly rub the entire tenderloin with salt, pepper, and Dijon mustard, ensuring it's evenly coated.
  3. Place the prepared tenderloin into a roasting pan.
  4. Preheat your oven to a high temperature of 500 degrees Fahrenheit.
  5. Roast the tenderloin for approximately 35 minutes, or until a meat thermometer inserted into the thickest part registers the desired internal temperature for medium-rare doneness. Actual cooking time may vary depending on the thickness of the tenderloin and the accuracy of your oven.
  6. While the beef is roasting, prepare the blue cheese cream dressing. In a mixing bowl, combine the mayonnaise, sour cream, horseradish, crumbled gorgonzola cheese, lemon juice, and Worcestershire sauce.
  7. Season the dressing with salt and pepper to taste. Mix all ingredients together until well combined.
  8. For the best flavor, prepare the dressing approximately two hours before serving and allow it to sit at room temperature. This allows the flavors to meld together.
  9. Once the tenderloin has reached the desired internal temperature, remove it from the oven and let it rest for a short period before slicing.
  10. Slice the rested tenderloin against the grain and serve immediately, accompanied by a generous dollop of the prepared blue cheese cream sauce.
