Follow the steps in order for the best result.
Begin by lightly coating the inside of your crock-pot with cooking spray to prevent sticking.
Rinse the whole chicken thoroughly under cold water, ensuring any giblets have been removed from the cavity. Place the chicken inside the prepared crock-pot.
In a separate mixing bowl, combine the chicken gravy mix with water and white wine. Whisk until well blended, ensuring there are no lumps.
Pour the gravy mixture evenly over the chicken, making sure to coat it thoroughly.
Cover the crock-pot and cook on low heat for approximately 6 hours, allowing the chicken to become tender and flavorful.
About 1 1/2 hours before the end of the cooking time, add the carrots and onions to the crock-pot, nestling them around the chicken. This will allow them to cook until tender-crisp.
Once the cooking time is complete, carefully remove the chicken from the crock-pot and place it on a cutting board. Let it rest for at least 15 minutes before carving. This allows the juices to redistribute, resulting in a more moist and flavorful bird.
Remove the vegetables from the gravy using a slotted spoon. If desired, strain the gravy to remove any solids and thicken it to your preferred consistency using a cornstarch slurry or other thickening agent.
